Soymilk production expansion REMIX
Expanding soymilk production in order to increase access and availability of high-protein dietary substitute.
By virtue of wind, birds and certain companies, soy beans are GMO -- we don't know the long term effects and this could be more distatrous than helpful. There is also a growing body of research about the detriment of estrogen-mimicking in soy beans.
Another consideration would be quinoa -- a full protein and can be dried for long term storage rather than pasteurized which decreases the nutritional value of food by nearly half. Lentils would also be another good crop to consider. My expertise is nutrition rather than farming, so admitedly from a farming standpoint I'm not sure these would be a good match -- possibly too hot for quinoa.
What would really be a boost would be to help Ghanaians start consuming the many greens available -- cassava leaves have huge amounts of protein! Far better than cooking, get a bank of high speed blenders, such as VitaMix and start making green smoothies. You would see huge improvments in health, immune system functioning, brain development and clarity and energy levels.
